This was delicious! I used chicken thighs and a combination of white wine and chicken broth. There was plenty of sauce and it was perfectly spiced. I serve it over pasta and it is a great combination.
I made this tonight...and it tasted really good. I did have the chicken breast all done before I put it into the oven to finish cooking. I also used a whole bottle of white wine, and poured about half of it over the top of the chicken. I think I might have over-oiled it, because the chicken was a little on the dry side, and I think the liquid kinda made the bottom of the pan soggy. It was still really good, and I really liked the flavor, but next time I'll be more careful about the amount of oil I use. I think I probably would have liked to add some more garlic, but I didn't want to add too much more fat to the pan, so I skipped that step.
I made this for dinner last night and it was delicious! It was a nice change of pace from my usual pasta, with the crispy chicken and the creamy sauce. I don't usually like seafood, but I really liked the way the flavors mixed together. Will definitely be making this again!
Just finished this, using a small nonstick skillet, and it was delicious! I added the lemon, zest, and juice, but skipped the garlic. I also made a few other substitutions: 6 boneless, skinless chicken breasts (like I was going to waste them!) instead of 6 legs, 4 Tbsp. butter instead of olive oil (though I used the full 1/2 cup), 1/4 tsp. cayenne pepper (and no red pepper flakes), and 1/2 tsp. dried parsley instead of 1/2 tsp. fresh (next time I will do 1/4 cup parsley). It was a bit of a challenge to get the pan very hot enough to get the right color on the chicken before the bottom began to smoke. I would have liked to add more garlic, and maybe 1/2 cup of a white wine, but I didn't want to add too much more fat to the pan. The end result was a little on the dry side, but very flavorful, and I would definitely make it again!
